Commercial Break : Binagoongan

If you can't go back to Manila for Christmas, let Manila come to you with this super easy binagoongan recipe!

What you will need:
1 pc tomato
1 pc onion
1 head garlic
spicy bagoong
3/4 tall can of coconut milk
1 kg pork rashers

Mince, dice and slice!!!

Because even if you chose to be like Nigella over Gillian, you still want to live up to a hundred. Therefore, you will trim the pork fat.

Saute the onion and garlic. Add in the tomato. The secret to sauteing is mashing the tomato very well.

Add 5 giant spoonful of bagoong. Don't be shy. You can even put 6...or 7...or 8...you get the point.

Stir for about 30 seconds.

Add 3/4 can of coconut milk. What the heck! Add the whole thing in. This way, you can drizzle the yummy binagoongan sauce on top of steaming hot white rice. What will you do with the 1/4 can left anyway?!

Add in the pork. Simmer for 1.5 hours with the lid partially open. This will allow the sauce to evaporate. Stir the pot every 15 minutes.

Ta-daaaaaaaaa!!! This is SOOOO gooooood!

On a side note, can Ninang Joy explain the difference between "Sooooo good" and "So gooooooood"?!

Special thanks to Mama Carrie for this delicious recipe.
